DOSAGE ZERO: MAXIMUM COMPLEXITY
Obtained exclusively from the best cuvees produced with Chardonnay and Pinot Noir grapes, this Dosage Zero is the pride of Castel Faglia, a Franciacorta DOCG that perfectly interprets the different characteristics of the terroir of provenance of the grapes. The exposure of the plants, on centuries-old property terraces, is south-facing, being this a characteristic that gives this snip of territory a particularly mild microclimate compared to the surrounding areas, the sandy, calcareous and partly clayey texture of the soil then does the rest, giving elegance to a Pinot Noir that already does not skimp on the structure giving even more grace to Chardonnay. This is how a great Dosage Zero is born, rich and with a great potential for aging.
Straw yellow in colour with golden veins, intense nose and articulated in the aromas of pastry, bread crust and biscuits, citrus notes of candied zests and raisins and a balsamic background that recalls eucalyptus and fern. Outspoken taste, elegant and direct in expressing a sour-flavoured dowry of great volume and body, with long hints of citrus and minerals.
Great to dine with the great raws from the sea and with sushi, it is perfect with monk fish gratin.
